The typical dishes of the Roman tradition are cooked under the eyes of the customers - thanks to stations in front of the kitchen - and revisited in a modern key to offer a simple but innovative menu. For example, the Carbonara del Marchese and his Scarpetta served with the iconic Roman rosette. To prepare the dishes, not chefs but real cooks, for a return to the origins when cooking was not a trend but passion and total dedication.

Back in 1961, Armando Gargioli, thanks to the advice of some of his merchant friends, landed near the Pantheon exactly in Salita de' Crescenzi at n° 31.
